Ingredients
  • 250g Long Grain Rice
  • 400ml Water
  • 20g Butter(optional)
  • 1tbsp Olive Oil
  • 1 Onion(finely chopped)
  • 2 Garlic Cloves(crushed)
  • 250g Mushrooms(sliced)
  • 1 Red Pepper(deseeded and sliced)
  • 125g Broccoli(tender stem/tips)
  • 3 Tomatoes(skinned and roughly chopped)
  • 320g Canned Tuna(drained)
  • 1Large handful Parsley(chopped)

Instructions
  1. Put the rice in a large pan, cover with the water, add the butter, if using, and bring to the boil. Gently simmer for approximately 15 minutes, until the rice is cooked.
  2. Meanwhile, heat the oil and cook the onion and garlic until soft and translucent. Add the sliced mushrooms, red pepper and broccoli and cook for 3 minutes.
  3. Stir in the tuna, tomatoes and cook for 5 minutes until heated through.
  4. Finally stir in the cooked rice and parsley.
