Ingredients
- 400g Penne Pasta(dried)
- 1tbsp Olive Oil
- 1 Onion(finely chopped)
- 6 Anchovy Fillets(finely chopped)
- 2 Tomatoes(skinned and roughly chopped)
- 1tbsp Capers
- 2Cans Canned Tuna(Drained)

Instructions
- Cook the pasta in a large pot of boiling water.
- Whilst the pasta is cooking, heat the oil in a pan and cook the onion over a medium heat until soft and translucent.
- Mash in the anchovy fillets and once broken up stir in the tomatoes and cook for a further minute. Next add the capers and drained tuna.
- Drain the cooked pasta, pour over the tuna and anchovy sauce, ensuring all the pasta is coated. Garnish with some chopped parsley.
