Ingredients
  • 400g Penne Pasta(dried)
  • 1tbsp Olive Oil
  • 1 Onion(finely chopped)
  • 6 Anchovy Fillets(finely chopped)
  • 2 Tomatoes(skinned and roughly chopped)
  • 1tbsp Capers
  • 2Cans Canned Tuna(Drained)

Instructions
  1. Cook the pasta in a large pot of boiling water.
  2. Whilst the pasta is cooking, heat the oil in a pan and cook the onion over a medium heat until soft and translucent.
  3. Mash in the anchovy fillets and once broken up stir in the tomatoes and cook for a further minute. Next add the capers and drained tuna.
  4. Drain the cooked pasta, pour over the tuna and anchovy sauce, ensuring all the pasta is coated. Garnish with some chopped parsley.
