Ingredients
- 250g Long Grain Rice
- 400ml Water
- 20g Butter(optional)
- 1tbsp Olive Oil
- 1 Onion(finely chopped)
- 2 Garlic Cloves(crushed)
- 250g Mushrooms(sliced)
- 1 Red Pepper(deseeded and sliced)
- 125g Broccoli(tender stem/tips)
- 3 Tomatoes(skinned and roughly chopped)
- 320g Canned Tuna(drained)
- 1Large handful Parsley(chopped)

Instructions
- Put the rice in a large pan, cover with the water, add the butter, if using, and bring to the boil. Gently simmer for approximately 15 minutes, until the rice is cooked.
- Meanwhile, heat the oil and cook the onion and garlic until soft and translucent. Add the sliced mushrooms, red pepper and broccoli and cook for 3 minutes.
- Stir in the tuna, tomatoes and cook for 5 minutes until heated through.
- Finally stir in the cooked rice and parsley.
